Preparation Time : 20 mins

INGREDIENTS REQUIRED
Oil

Besan ( Gram Flour)
1 cup
Atta (Wheat Flour)
2 cups
Carom Seeds
1 tsp
Ginger
1. 5 inches (gratted)
Garlic
5 cloves(gratted)
Fresh Coriander
4-5 strands (Finely chopped)
Salt
1 tsp
Water
As per required

STEPS TO YUMMY BESANI ROTI


  1. Kneed a soft dough mixing all these ingredients. 
  2. Let it rest for 15-20 min
  3. Take small ball and roll them to form small round chapaties.
  4. Cook as regular chapaties.

Besani roties go well with all  curries. Try them with bangan bharta. Trust me you gonna love the combination.

INSTANT VEG BIRYANI



INSTANT VEG BIRYANI

Preparation Time : 15 mins
Cooking Time : 10 min
Serves : 4 ppl

INGREDIENTS REQUIRED
Rice
200 gms ( 1 CUP soaked for 1/2 an hour)
Nutri-nuggets
15-20 nos. ( You can use chunks also)
Water
4 cups
Ghee
2 tbsp
Bay leaf
1 nos
Cumin Seeds
1 tsp
Black Pepper
5 nos
Black Cardamom
1 nos
Green Cardamon
2 nos
Cloves
4-5 nos
Cinnamon
1 inch stick
Onion
1 Medium size ( sliced)
Potato
1 Medium size (Diced)
Carrots
2 (Diced)
Peas
1/2 cup
Cauliflower
1/2 cup (diced)
Beans
1/2 cup (cut in 1/2 inch)
Salt
1 tbsp
Turmeric
1 tsp
Red Chilli Powder
1 tsp
Garam Masala( all spice mix)
1.5 tsp

STEPS TO INSTANT VEG BIRYANI
  1. Thoroughly wash the rice and soak it for 1/2 an hour , similarly soak nutri – nuggets in warm water for the same duration.
  2. In a Pestle , roughly grind all the dry spices together except cumin seeds.
  3. Take a pressure cooker, Add ghee. 
  4. Now add all the dry spices in it starting with bay leaf and cumin seeds.
  5. Add (Black Cardamom +Green Cardamom+ Black Peppers+ cloves+Cinnamon ) 
  6. Saute a little, Now add Sliced onion, let it cook for 2 min.
  7.  Add all the Veggies ( Potatoes +Carrots+ Cauliflower+Beans + Peas). If you want to add tomatoes . Add in this step only.
  8. Add Turmeric powder, salt, Red chilli powder and garam masala to it. 
  9. Saute a bit, then add nurti- nuggets also.
  10. Add soaked rice to it.
  11. Cook for 2 min, gently mixing the rice and veggies.
  12. Add Water.  Cook till 1 whistle, then cook at low flame for 5 min.
  13. Switch off the gas, an let pressure release on its own.

 Here you go... Your delicious Veg Biryani is ready. Serve hot with papad, chutney,
 onion and Achar.

POHA ( BEATEN RICE UPMA)

Preparation Time : 15 mins
Cooking Time : 12 min
Serves : 2 ppl



INGREDIENTS REQUIRED


Oil 1 tbsp
Mustard seeds 1 tsp
Peanuts 1/2 a cup
Curry leaves 10-15 leaves
Ginger 1. 5 inches (Finely chopped)
Onion 1 medium sized (Finely chopped)
Beaten Rice 1.5 cup
Salt 1.5 tsp
Turmeric 1 tsp
Red Chilli powder 1/2 tsp
Potatoes 1 medium sized (Boiled and diced)
Tomatoes 1 medium sized ( chopped)
Peas 1/2 Cup ( Boiled)
Coriander leaves 4-5 strands ( Finely chopped)
Green chilli 1 ( Chopped)


1. Wash the beaten rice ( Poha)  in a seave and let it rest for 15-20 mins..
2.  Now heat some oil in a kadhai. Fry the dry peanuts (to red color) and keep them aside.
3. In the same kadhai ,Add mustard seeds to the oil , followed by curry leaves.
4. Add finely chopped onion and ginger.
5. Saute it , till it becomes golden brown, now add potatoes and boiled peas.
6. Add salt , red chilli powder and turmeric to it.
7. Also add diced tomatoes.Let it cook for 2 mins.
8. Add washed beaten rice(Poha) to it. Mix well and cook for 5 mins.
9. Top it with fried peanuts, green chillies, lemon drops and coriander leaves.(You can also add grated coconut)

Serve hot with tea or coffee.

KASURI METHI -MALAI PANEER (COTTAGE CHEESE CURRY)



KASURI METHI -MALAI PANEER

Preparation Time : 15 mins
Cooking Time : 10 min
Serves : 4 ppl

INGREDIENTS REQUIRED

Mustard Oil 1 tbsp
Ginger 1 inch (Finely Chopped)
Garlic 5-6 cloves (Finely chopped)
Onion 1 Medium size (Finely chopped)
Tomato Puree 3 medium size , blended in mixer
Turmeric Powder 1 tsp
Salt 2 tsp
Sugar 1 tsp
Coriander Powder 1 tsp
Red Chilli Powder 1 tsp
Garam Masala ( All Spice Powder) 1 tsp
Paneer(Cottage Cheese) 250 gms( Cut in cubes)
Milk 1/2 Cup
Fresh Malai(or Cream) 1/2 Cup
Dry Fenugreek leaves ( Kasuri Methi) 1 tbsp


STEPS TO SUPER DELICIOUS KASURI METHI -MALAI PANEER

  1. Take a Kadhi , add 1 tbsp mustard oil in it.
  2. In the smoking hot oil , add garlic and ginger, Keep sauteing.
  3. As they change color to golden brown, add chopped onion.
  4. Saute a little, now add all the spices ( salt+turmeric powder+coriander powder + Red chilli powder +all spice powder )
  5. Quickly add tomato puree.
  6. Cook for 2 min, now add fresh malai( or cream) to the kadhai.
  7. Saute a little, add Paneer cubes and suger in it.
  8. Dilute the curry using Milk, little water can be added if required.
  9. Add Fenugreek leaves, just crush them between palms before adding.
  10. Cook for 5 min.
Indulge yourself in lip smacking methi-malai paneer curry. Pair it up with any bread of your choice.

SEMOLINA VERMICELLI I( SUJI VERMICELLI)





SEMOLINA VERMICELLI

Preparation Time : 15 mins
Cooking Time : 10 min
Serves : 4 ppl


INGREDIENTS REQUIRED

Ghee
1 tbsp
Carom Seeds
1 tsp
Onion
1 Medium sized(Sliced)
Potatoes(Boiled)
1 Medium sized(Diced)
Peas
150 gm or 1/2 Cup
Vermicelli (Semolina)
1 Cup
Water
1.5 Cup
Salt
2 tsp
Turmeric Powder
1 tsp
Red Chilli Powder
1 tsp



STEPS TO TASTY SEMOLINA VERMICELLI
  1. Dry roast the vermicelli , till it become golden brown. Keep it aside.
  2. In a kadhi or Pan , add 1 tbsp of ghee. 
  3. Add carom (Ajwin) seeds to it. Saute a little.
  4. Add sliced onions, saute it, till it seems translucent with slight brown edges.
  5. Add all the spices (Salt+ Turmeric + Red chilli)
  6. Now add Potatoes and Peas , saute for 1 min.
  7. Add 1.5 Cup water to the kadhi, let it boil.
  8. As the water starts boiling, add roasted vermicelli to the kadhi.
  9. Cover the lid and cook it for 5 min, at medium flame.
  10.  Remove the lid, check if it is done, else cook for another 2 min.
And here you are with your super delicious and healthy breakfast. Enjoy..!

CRISPY MOONG DAL CHILLA

Preparation Time : 15 mins
Cooking Time : 5 min / chilla
Serves : 4 ppl

INGREDIENTS REQUIRED

FOR CHILLA :
Moong Dal 1 Cup ( Soaked for atleast 2 hours or 1/2 hour in warm water)
Salt 1 tbsp
Red Chilli Powder 1 tsp
Turmeric Powder 1 tsp
Garam Masala Powder 1 tsp

FOR FILLING:

Onions 1 Medium Sized
Ginger 1 inch piece
Potatoes (Boiled) 3 Medium Sized
Salt 1 tbsp
Red Chilli Powder 1 tsp
Turmeric Powder 1 tsp
Coriander Powder 1 tbsp
Garam Masala Powder 1 tsp
Cumin Powder 1 tsp
Mango Powder (Aamchur) 1 tsp
Paneer(Cottage cheese) (Optional) 100 gm
Oil/ Ghee 3 tbsp
STEPS TO DELICIOUS MOONG DAL CHILLA

1. Wash the soaked moong dal , rinse extra water and grind it into a smooth paste.
2. Adjust the consistency using water. ( We want cake batter consistency here)
3. Add all the spices salt+ red chilli powder+ turmeric + all spice powder(garam masala)
into the batter.
4. Our chilla batter is ready. Lets work on filling.
5. Add 1 tbsp oil in the pan.
6. Now add finely chopped Onion and ginger into it.
7. As it turns brown , add all the spices ( salt + Red chilli powder+ coriander powder+
Garam masala + cumin powder), Saute a little.
8. Now add potatoes into it . ( roughly mashed)
9. Give it a mix add mango powder and fresh coriander( if available) then cook for 5 min.
10. Heat non-stick tawa , grease it with ghee.
11. At medium flame, add a small portion on moong dal batter and spread it evenly just as
dosa batter.
12. Wait till it become golden form the bottom side,drizzle a little oil, now flip and cook for couple of min
from other side.
13. Put some filling in between , grate some paneer over it and roll it.
14. Pair it up with green chutney or tomato catch-up. Enjoy your delicious breakfast.



OREO LOVE SHAKE





OREO LOVE SHAKE

Preparation/ Mixing Time : 2 mins
Serves : 1 Mason jar (Make as many as you can :) 

INGREDIENTS REQUIRED


Oreo Cookies (Vanilla ) 6 nos.
Coffee Powder 1 tsp
Chocolate Ice-cream 2 scopes
Milk 250 ml
Whipping Cream (optional) 2 tbsp
Coco powder (Optional) 1 tbsp


STEPS TO DELICIOUS OREO LOVE SHAKE

1. Add Oreo cookies + coffee powder+ chocolate ice-cream + Milk in a blending jar.
2. Blend it into a smooth shake ( You can add ice cubes also ). 
3. Pour the mix into the Mason jar.
4. Top it with whipping cream and coco powder. ( I made coco heart using self made stencil )

Serve chilled and share love :)

Refined flour/Maida
1 tbsp
Milk
1 cup(200 ml)
Ginger
1. 5 inches (Finely chopped)

5 cloves(Finely chopped)
Red Bell Pepper
100 gms ( cut in cubes)
Green Bell Pepper
100 gms ( cut in cubes)
Capsicum
100 gms ( cut in cubes)
Broccoli 
150 gms (only flower portions cut in small size)
Onions
100 gms ( cut in cubes)
Tomato
100 gms ( cut in cubes)
Paneer(Cottage Cheese)
100 gms ( cut in cubes)
Salt
1tsp
Black Pepper Powder
1tsp
Sugar
1/2 tsp



STEPS TO YUMMY BAKED VEGETABLES IN WHITE SAUCE

  1. Heat the oil, add ginger and garlic into it.
  2. As it turns brown , Add all the diced vegetables and paneer cubes.
  3. Add salt and pepper into it. Keep these veggies aside.
  4. For making white sauce : Heat 1tbsp butter in the pan.
  5. Add Refined flour(Maida) into it. Saute a little.
  6. Add milk in the same pan. Whisk continuously so that there would not be any lumps in it.
  7. Add salt , pepper and sugar in it. ( keep in mind that we have added salt in vegetables also)
  8. In a baking dish, layer the saute vegetables.
  9. Pour creamy white sauce on the vegetables.
  10. Grate processed cheese as a top layer.
  11. Bake for 12 mins at 180°C . And here you go, indulge yourself in the pure sin.

CARROT CINNAMON CUP CAKES

Preparation Time : 15 mins
Cooking Time : 15-20 min
Serves : 9-10 Nos (depending upon size)

INGREDIENTS REQUIRED
Carrots
1 and 1/2 Cups
Resins
20 nos
Almonds
6-7 finely chopped
DRY INGREDIENTS
All Purpose Flour / Maida
1 Cup
Baking Powder
1 tsp
Baking Soda
1/2 tsp
Salt
1/4 tsp
Cinnamon powder
2 tsp
WET INGREDIENTS
Condensed Milk (Milkmaid)
1/2 Cup
Refined Oil/Butter/Malai
1/2 Cup

STEPS TO DELICIOUS CARROT CINNAMON CUP CAKES
  1. Mix condensed milk and oil together . Use hand/electric beater to form a smooth paste.
  2. In a separate bowl sieve all purpose flour + baking powder + baking soda + cinnamon powder + salt. Repeat it for 4 -5 times. It will help to add air in the flour.
  3. Grate the carrots and squeeze out excess juice.
  4. Add Dry Ingredients and wet ingredients together. Give a gentle mix, add carrots and Resins also.
  5. Adjust the consistency using milk. It should be little thicker than cake mix.
  6. Pour the mix in the cup cake molds. Add chopped almonds on the top to garnish.
  7. Pre - heat the oven at 180 °C .
  8. Bake for 15 min.
  9. Check by pricking a tooth pick in a cup cake. If it comes clean, they are done. Else bake for another 5 min.Depending upon quantity ,time may vary. Ideal time is in between 15-20 min. If you want to bake same batter as a cake it will take 35-40 min.

RAJMA CURRY(KIDNEY BEANS CURRY)

RAJMA CURRY



Prepartion Time : 15 mins
Cooking Time : 15 min
Serves : 4

INGREDIENTS REQUIRED


Rajma
200gm(1 Cup) {soaked overnight (8-10 hr)}
Oil
2 tbsp Musturd Oil / Ghee/ Refined/Olive(1 tbsp)
Water
2-4 Cups
Cumin seeds
1/2 tsp
Bay leaves
2 nos
Turmeric powder
1/2 tsp
Coriander powder
1 tsp
Red Chilli Powder
1/2 tsp
Garam Masala(Spice Mix)
1 tsp
Salt
1 tsp(or to taste)
Ginger
1 inch
Garlic 4-5 cloves
Green Chillies 1 nos
1 nos
Onion
2-3 medius size
Tomatos
4 medium size
Coriander leaves 4 strands finely chopped

STEPS TO DELICIOUS RAJMA CURRY

1. Wash the soaked Rajma ( Kidney Beans) and pressure cook (with some salt)  it for 3-4 whistles      then cook at low flame for about 5 mins. Keep it aside and don't throw the water used during boiling.
2. Take a 'Kadhai' or broad pan. Add Oil + Bay leaves + Cumin Seeds.
3. As the cumin seeds starts spurting. Add Ginger+ Garlic Paste (or finely chopped)
4. Add Onion pastes to the Kadhai.
5. Once Onion turns golden brown. Add all the dry spices ( Turmeric powder + Coriander Powder +       Garam Masala + Red chilli Powder + salt )
6. Keep sauteing, add tomato puree to the kadhai . Wait till it starts leaving oil on sides,
7. Now add boiled Rajma and cook for 10-15 min on low flame.
8. Adjust consistency as per requirement.
9. Garnish it with finely chopped Coriander and serve hot.

Rajma tastes awesome with both Rice as well as chapatis.

SWEET RICE PULAO( ZARDA)




ZARDA PULAO | SWEET RICE PULAO |YELLOW RICE PULAO

Prepartion Time : 15 mins
Cooking Time : 25 min
Serves : 4 ppl

INGREDIENTS REQUIRED
Rice 200 gms ( 1 CUP  soaked for 1/2 an hour)
Sugar 150 gms
Saffron 10-15 strands
Water 4 cups
Cashew Nuts 20 nos
Almonds 20 nos
Resins 20 nos
Ghee 4 table spoon
Khoya ( Mawa) 1/2 Cup
Cardamon 4-5 nos
Cloves 4-5 nos
Bay Leaf 1 nos
Cinnamon 1 inch stick
Milk 1/2 cup


STEPS TO DELICIOUS ZARDA PULAO | SWEET RICE PULAO
  1. Add soaked rice and saffron in the boiling water. Cook rice till it is 80% done. Strain the excess water. Keep it aside.
  2. Take a broad pan. Stir fry all the nuts (Almonds, Cashew and Resins ).
  3. Add ghee + cardamon + cloves+ bay leaf + cinnamon stick, Saute a little.
  4. Now we will start layering the pulao. Add half the quantity of rice. Top it with half the quantity of sugar+ 1 tbsp ghee + half  the quantity of mawa (khoya) + Fired nuts (dry fruits). All the ingredients should be sprinkled uniformly. 
  5.  Similarly layer it again with rest of the material. 
  6. Add half cup of milk to the pan.
  7. Cover the lid and cook it for 20 min at low flame.
Your delicious Zarda Pulao is ready. Enjoy it.. !
